Kielbasa Potato Bake

This hearty side or even main dish can be prepped ahead of time and baked just before serving. The peppers, the potatoes, the kielbasa; great on a cold afternoon.  The directions below are for baking in the oven, but you can take this all and cook in in a skillet for about 20-30 minutes on a portable gas stove if tailgating before the game.

You will need:

1 pound kielbasa, cut into 1-inch pieces
1 – 1 1/2 pounds baby potatoes, washed and cut into small pieces
1 red pepper, diced
1 green pepper, diced
1/2 medium onion, diced
1 teaspoon minced rosemary (one or two sprigs)
1 teaspoon minced thyme (6-8 fresh pieces of thyme, leaves only)
2 tablespoons chicken stock
2 tablespoons country Dijon mustard, or stone ground mustard depending on preference
Kosher salt & fresh cracked pepper

Preheat the oven 375º.

In a 2 1/2 to 3 quart casserole dish, combined all the ingredients until everything is well-coated with herbs, stock and mustard. Baked covered for 30 minutes to steam the potatoes as much as possible. Remove from the oven and give a good stir and then bake uncovered for another 30 minutes.

Serve 4-6 as a side dish, 3-4 as a main dish.
